Cake with honey and walnuts

Ingredients

500 g. honey

240 g. milk

100 g. sugar

8 eggs

500 g. flour for all uses

2 tsp baking powder

1 tsp cinnamon

1 orange, zest of

150 g. walnuts

 

Directions

In a bowl, mix the milk with sugar and eggs. In a saucepan heat the honey and add the previous mixture, stirring. then add the flour with the baking powder, cinnamon, zest and nuts. Mix and pour into a mold of your choice. Bake in a preheated oven at 160 ºC for about 45 minutes. Allow to cool, sprinkle with icing and serve with yogurt or unsweetened whipped cream.

Ingredients

450 g. sesame paste
200 g. honey
200 g. couverture chocolate, in pieces
150 g. various nuts (pistachios, walnuts, hazelnuts)
150 g. cereals
200 g. oats
80 g. cranberries

 

Directions

Heat the honey in the microwave for 30 seconds. Mix the sesame paste with honey in a large bowl. Careful not to mix to much it will become stif. Melt the chocolate in a bowl with a film on the microwave at 800 watts for 2 minutes or in a bain marie. Stir the chocolate in the sesame paste – honey mixture.

Finally add the oats, nuts and cranberries and mix well. Pour grains and continue stirring by hand. Put a large film piece onto a baking sheet 20×30 cm. Spread the mixture on top, add a few more grains on top, closing the membrane on top and leave in the fridge to cool approximately 3-4 hours.

To serve, cut into 20 bars 5cm thick.

Cookies with sesame paste, honey and oats

Ingredients

100g sesame paste
120g honey
120g rolled oats
1/2 tsp cinnamon
A handful of walnuts or almonds or chopped hazelnuts or sesame or chocolate crumbs

Directions

Join all ingredients in a bowl and pour the dough in a food bag or membrane. Without making your hands dirty shape into a roll, and put it for 5 minutes in the freezer.

Turn on the oven to heat at 180 °C, and cut the dough into rings. It does not matter if dissolved, touch with your hands and unite. Cooking will open shortly. Keep it in a non-stick pan. Bake for 10 minutes to get crispy biscuits.

Bites with walnuts and sesame

Ingredients

500 g. grated walnuts
300 g. honey
1 orange, zest (akeroto)
1 lemon, zest (akeroto)
1/2 tsp cinnamon
sesame for coating

 

Directions

In a bowl, mix together all ingredients except sesame. Shape small balls and roll on sesame seeds until well covered. Keep them out of the refrigerator.

Pasteli

Ingredients

400 g. Thyme honey
400 g. Sesame
Half lemon zest

 

Directions

In a saucepan, add the honey and place it to heat. Allow to boil until the temperature reaches at 125 °C-130 °C. Remove from heat and add the sesame seeds and lemon zest. Stir and spread the mixture on a coarse nylon or preferably a silicone surface. Then cover with another nylon or silicone surface and press with a rolling pin so that the sesame to obtain a thickness of 1 cm. Allow to cool and cut pieces into the shape you want. Keep them in a box, away from moisture or wrap them in cellophane.

Tip
You could add to the mix some almonds. Better to be roasted.

Honey mousse

Ingredients

500 ml of milk
150 g. honey
4 egg yolks
25g. gelatine
500 g. whipped

Directions

Heat the milk with honey. Stir well with a mixer the egg yolks and them slowly to the milk mixture. Dissolve the gelatin in a smal amount boiling water. Pull the fire pan, add gelatin and mix well. Strain from fine strainer and refrigerate for about one hour. Gently stir in whipped cream. Divide into glasses or bowls and leave in the refrigerator at about 5 hours before serving.

 

Dried figs with honey and butter

Ingredients

12 -16 dried figs
2 c. brandy
6 tablespoons margarine
4 tablespoons flower honey
1 k.g.trimmeni cinnamon
1 pinch of salt

Directions

Preheat oven to 200 °C. Wash the figs, dry, remove their stalks and put them to soak in brandy overnight. Drain well and cut in half without separate them completely. Then press until flattened and put them with the cut side up in the oven on a baking sheet lined with parchment paper. Put the margarine, honey, salt and cinnamon in the mixer and work until you have a smooth mixture. Then hand it out up to figs. Bake about 15 minutes. Put, if desired, 1 sprig of lavender onto each fig and serve two figs on serving.

Doughnuts

Ingredients

640 grams flour
640 grams lukewarm water
½ teaspoon salt
½ teaspoon sugar
18 grams yeast
Oil
Cinnamon
250 grams ground walnuts
Honey for garnish

 

Directions

Dissolve the yeast in lukewarm water and add the other ingredients. Stir well until it becomes watery dough without lumps. Then place in a warm, dry place until it swells. Cut the dough by hand or with a spoon, dip into the oil, into small pellets, and throw them in plenty of hot oil. Fry the fritters for 1-2 minutes, until they are a deep orange color. Serve with honey, cinnamon and grated walnut top.
